



Old-Fashioned Baguettes & Épi Bread Workshop
Homemade, crusty, and full of character
In this hands-on workshop, I’ll guide you step by step in making rustic French baguettes and charming wheat stalk-shaped loaves (“pain épis”), using a blend of organic flours and seeds carefully chosen for their flavor and nutritional value.
This is a recipe I’ve refined over the years—first while living in the U.S., working without any equipment, and later adapted to my daily routine with a stand mixer. No hard kneading is required, and the use of a mixer is entirely optional.
On the menu:
🔸 Crisp, golden baguettes shaped by hand, with a soft, flavorful crumb
🔸 Elegant pain épis, easy to make and perfect for impressing at the table or during aperitif
🔸 An accessible method, with or without a mixer, and no fancy equipment needed
🔸 A flexible recipe using dry active yeast (or instant yeast), for baking on your own schedule
During this workshop, you will:
– Learn to make your baguettes and wheat stalk bread by hand or with a mixer
– Discover tips to achieve a crusty exterior and soft interior
– Leave with digital recipes and advice to play with different flours and adapt the baking time to your preferences
